Kids don’t like vegetables — there’s no two ways around it. But they may like this maple syrup acorn squash recipe because it makes squash sweet.
This is an easy dish for mom and dad to make — not to mention inexpensive and good when you purchase from a local farmers market.
The standard approach is to bake acorn squash in the oven.
I tried a different approach.
I grilled mine and made them super sweet and tasty with a little brown sugar and real maple syrup.
Prep time: 15 minutes
Cooking time: 45 minutes to 1 hour
- 2 acorn squashes
- 1/4 cup real maple syrup
- 3 tablespoons brown sugar
- 2 tablespoons butter
How to cook acorn squash with brown sugar and maple syrup
Start the grill. I use a charcoal unit, which takes between 15-30 minutes to warm up to temperature. I prefer to let it get super hot.
Cut the squash in half. Remove the seeds and other gooey stuff.
Use a small bowl to mix together the sugar, butter, and syrup. Add a pinch of salt and pepper to taste.
I fill the inside of the squash with the mixture and rub some on the rim and the insides.
Add to the grill. Make sure the side you cut is facing up.
Cook until you can pierce the squash with a fork and it is tender.
